onigiri

Make sure you use Japanese style rice. Boil it, preferably with a nice big piece of Kombu, and let it cool - enough to handle it, you don't want it cold.

Wet your hands, make balls and coat their exterior with salt.

You can poke a hole in the center of your onigiri and place some japanese pickles in the center, bonito flakes, tuna, pork, chicken, etc etc. I like cheese and chicken salad (w/ mayo)

Once your onigiri are made, roll a strip of nori on the outside

Easy Japanese Chicken Wings

3 lbs chicken wings (cut in half)

2 eggs, beaten

1 cup flour

1/2 teaspoon cayenne pepper (or to taste, use only if you like spicy!)

1 cup butter

2 tablespoons vegetable oil

SAUCE

3 tablespoons soy sauce

3 tablespoons water

1 cup sugar

1/2 cup white vinegar

1 teaspoon Accent seasoning (optional)

1/2 teaspoon salt

Mix the flour with the cayenne pepper.

Heat butter and oil in a skillet until hot.

Dip the wings into the eggs, then into the flour mixture.

Fry the wings until deep brown and crisp, then transfer into a shallow roasting pan.

Mix all ingredients for the sauce.

Bake for about 30 minutes at 350 degrees, spooning the sauce over the wings while baking.

Delicious!

Da Best Butter Mochi

Hawaii has much Japanese influence. This yummy desert easy to prepare and is an island favorite.

3 teaspoons baking powder

4 cups whole milk

4 eggs

2 teaspoons vanilla

8 tablespoons butter, melted

Mix all ingredients with mixer until all blended.

Pour into greased 9x13 pan.

Bake at 325F for 1.5 hours.

Okonomiyaki (Japanese Pizza)

Enjoy!

3 pancakes 40 min 10 min prep

1/2 cup flour

1/2 cup water

4 tablespoons mashed potatoes

2 cups shredded cabbage

6 mushrooms (optional)

3 tablespoons oil

1 (155 g) package vegetarian ham (optional)

4 tablespoons mayonnaise

4 tablespoons barbecue sauce

Mix together Flour, Water, and Mashed Potatoes and then lastly add the Cabbage. (I know people don't usually have mashed potatoes hanging about but if you don't have time to make them before hand, try another egg replacer to see what happens?).

Heat a skillet on medium, adding a little bit of oil. Cut up the Sandwich "Meat" and/or mushrooms and fry them slightly ( if you fry the veggie ham for too long they will become too crunchy). Right over the ham/mushroom pieces, pour in one third of the mix and spread it around in the frying pan so that it becomes a "pancake" shape (Conversely, you can mix the "ham" into the mix above and skip this step).

Cook for 5 mins (I usually cover it with a pan lid).

Flip. Cook for 5 more minutes.

Repeat steps 2 to 4 for the last two pancakes.

Mix together equal parts of mayonnaise and BBQ sauce for the sauce to spread on the "pizza".How do you make a bento?
Onigiri

INGREDIENTS:

* 4 cups steamed Japanese rice

* 8 strips of dried nori (seaweed)

* Salt to taste

* *For fillings:

* ume (pickled plum) / grilled salted salmon

PREPARATION:

Grill salted salmon slices. After the salmon cools, tear it into small chunks and set aside. Cook steamed rice. Put about a half cup of steamed rice in a rice bowl. Make a dent in the center of the rice and place fillings, such as ume (pickled plum) and grilled salmon. Wet your hands in water so that the rice won't stick. Rub some salt on your hands. Place the rice in the rice bowl on your hands. Form the rice into a round or a triangle, by pressing lightly with your both palms. Wrap the rice ball with a strip of nori.

Makes 8 rice balls.

wet your hands with water first. I prefer to put my salt into the water in a bowl as a convenience, some people like to wet their hands and put salt onto their palms. which ever one you like. then scoop up some rice and mold it into a rough ball shape. make an indentation and put in your umeboshi. Then shape the rice ball into a triangular shape using your hands bent at the knuckle. then wrap nori around it. do NOT use furikake on it if you are vegetarian - most furikake do contain bonito - and that's fish!

Bento Chicken Teriyaki Recipe

This recipe is adapted from one in Bento Boxes by Naomi Kijima. It is scaled for a single lunchbox (bento box) sized serving. Add this to a big bowl of rice and veggies, maybe with some Japanese type pickles, and you have a great lunch! This recipe is not a quick recipe, though; cooking time includes marinating time. I would suggest starting the chicken in the marinade, then starting your rice, then fixing everything else while you wait for these two to finish.

1 tablespoon soy sauce

1 tablespoon mirin

1 teaspoon sugar

4 ounces boneless chicken (breast, tenders, thighs, whatever you have)

1/2 tablespoon cooking oil

3 tablespoons water

Mix first 3 ingredients together in bowl big enough to hold the chicken. Add the chicken. Let this marinate for 30 minutes, turning over halfway through.

Heat oil in a pan over medium heat.

Take the chicken out and pat dry. Reserve marinade. Put chicken skin side down (if you aren't using skinless) in pan and cook until browned on that side (just a minute or two) and then flip and brown the other side.

Pour reserved marinade over chicken and cover tightly. Lower heat and simmer until chicken is done, about 5 minutes.

Remove cover and raise heat back to medium high. Reduce marinade until it is more of a glaze. Toss chicken in glaze to cover.

NOTE: You could certainly substitute beef or tofu for the chicken in this recipe. Just adjust the cooking accordingly.

Bento Balls (Aka French Hamburgers)

My kids and I spend Wednesdays out in the woods either hiking, biking, or letterboxing. We have to take a huge lunch with us and usually it's a Japanese-style bento with onigiri, some protein item, and lots of vegies and pickles. More often than not, my kids will pick this for the protein...it's basically a french hamburger recipe that has been adapted for our bento lunches. Cooking time will vary with how large your patties are. The sauce is a true basting sauce and these will not be in a soupy sort of base. The point of bentos is to make the food as fuss-free to eat as possible. The meat mixture is soft and a bit tricky to work with, but the result is a moist patty that doesn't need condiments and isn't a rubbery hard superball.

MEAT PATTIES

1 cup fine dry breadcrumbs

1 cup havarti with dill (grated)

3 tablespoons prepared horseradish

3 tablespoons dried onions

1 teaspoon salt (or salt-spice mix of your choice, we prefer a Creole seasoning)

1/2 cup cottage cheese (or 1/4 cup dairy of some sort)

1 large egg

1 1/2 lbs ground turkey

BASTING SAUCE

1/2 cup butter (melted)

1/2 cup ketchup

1-2 tablespoon soy sauce

Preheat oven to 350 degrees and prepare a baking sheet by lining with parchment or foil.

Lightly coat the parchment or foil with cooking spray.

Mix the bread crumbs, havarti, horseradish, dried onion, salt (or spice-salt mix), cottage cheese, and egg together in a large bowl. (Please note that the horseradish should be prepared, i.e., the creamy kind that is mixed with mayonnaise. We use the Beaver brand.).

Allow to stand for 5 minutes to soften the bread crumbs.

Mix in the ground turkey.

The meat mixture will be very soft.

Form the meat into balls that will fit into your bento box(or on your plate).

Flatten slightly so that the meat is formed into shapes resembling patties
